The best way to fully enjoy whitebait is just with lemon juice and raw. Many family in Italy have it this way. I like them both way

Sorry, but it is. They do the best with what they've got but as they say, you can't polish a turd (quite literally, in some instances :o ).I think a restaurant in Legian serving take away fast food in the early morning hours will work well. I'm always in for a midnight burger after a long night out. There used to be a burger restaurant in Poppies that made very good hamburgers until late night (not the McDonald crap). Sadly the choices at that time are the nasi padang stall north of the bomb monument which has usually run out of my favourites (rendang, perkedel kentang, tempe goreng etc) by that stage, so it's a selection of cremated fish carcasses or god-knows-what body parts from some undisclosed and unidentifiable animal. Pass. Or there's Pop Mie from the Kwik-E-Mart (also some dehydrated mashed potato thingy which I tried once and probably deserved the gastronomic karma I got for purchasing a dehydrated mashed potato thingy at 5 o'clock in the morning). Or 24hr McBarfs. No further comments required.

You can't get decent fish in Indonesia because caring for fresh fish is unknown. The same goes for much of tourist destined Thailand.Sure there are fish farms which are predominantly raising shrimp which are sold to foreign fish brokers who select the best product and flash freeze it, but just try to get onto one of those fish farms as an ex-pat, Indonesian or non quantity buyer. It won't happen.

Agree on the fresh seafood idea, one of my dream is catching my own lobster in the Eastern Islands and grilled them without any spice :biggrin:
