We are moving to Bali next weekend :-)
Our plans are a minimum of 8 months then probably two months in Bali and a month back in Australia. Should we bring birth certificates etc or place in secure storage in Australia?

I’m not sure why you would need birth/marriage certificates here in the first place. Why not just bring copies?
You could also just scan them and send them to your own email address which you could then print later on if you needed to.
The only time I’ve needed my birth certificate here was when my wife accidentally washed my jeans with my Australian passport in the back pocket, after returning from a nearby island. The only intact parts were the covers. Then I had to prove my nationality/citizenship to the Australian Consulate in Denpasar before they would issue me with a new passport.
Oh, and I hope your move over here goes well.

If you are applying for a spouse visa, like if your wife is Indonesian then you probably need your marriage certificate.

Yes, that's true. But I didn't know who is married to whom, or what flavour either of them are.
