Nasi Goreng

NASI GORENG: It varies from region to region; types and personal preference.

Since you like chillies then it's the right dish to prepare as I too go for it abundantly.

But here's the basic one that everyone prepares.

Ingredients:
- Cooked rice but is already at room temperature or even cold. This is a must so it wouldn't stick when you fry and mix with other ingredients.
- 5 tbsps vegetable oil
- 3 tbsps kecap manis or sweet soy sauce
- decoratedly sliced tomatoes for garnish
- cabbage or lettuce leaves for garnish
- prosciuto cotto/cooken ham as side dish on the plate (I use this here in Italy), but otherwise you can always add sate or ayam goreng/fried chicken.

[color=#80FFBF]Grind (you can do it by using electric mixer/blender) to make it a spice-paste:[/color]

5 red big chillies (personally, this is not sufficient for me as I would add more and mix with the padi-chillies; the tiny red chillies which are really hot!!)
4 cloves of garlic
Shrimp paste or in Indonesian is called "terasi". This is optional for foreigners but not for Indonesians as it has a pungent odour but makes for the real authentic Indonesian nasi goreng.
Salt to taste.


6 shallots (sliced finely and fry until brown and rather crispy. Place aside to drain off the oil)

Heat oil and fry the pounded spice-paste until fragrant.
Add sweet soy sauce (kecap manis in Indonesian) into the pan until they all blend. Add rice and continue stirring until everything is blended evenly and nicely.
Serve it on an individual plate and sprinkle the fried onions.
The rest is up to your fancy such as adding the sliced or decoratively cut tomatoes, sliced cucumbers, some lettuce, emping (special local Indonesian crackers) or shrimp crackers.
You can even add a fried egg too to make it even more pleasing to the eye.

It's always a hit here in Italy whenever I serve to friends.

Again, I confess, I haven't cooked it for a long time now. Added by the advice of my Shaman in Jakarta on my last visit there not to include it in my diet.

But once in a while would be okay, I guess. So have a good try and let me know how it goes/turns out.

Here's mine - ala 'Fremantle style' :lol: (I like to add a few greens to make it a bit more healthy. My step kids had never seen so many veges in Nasi Goreng before but profess it to be 'enak')

few cups of cooled, cook rice

'the paste'
2-3 bawang (shallot onion)
2 tomatoes
3-4 small red chillies (pedas)
Salt
terasi (shrimp paste)
Kecap Manis

Grind together and mix in kecap manis so you should have a paste with a thickish consistency. But if a bit watery just fry it a bit longer to reduce.

another 2-3 bawang sliced
Chicken meat cut into pieces
Sayor Kombang (also called Choy Sum in Australia). Slice stalks and leaves.
Green Beans chopped
Shallots/spring onions chopped
Sliced cucumber and sliced tomato for decoration
Sliced boiled egg for decoration


Put some oil in a large fry pan, fry the onion until crispy. Set aside.

Fry the paste until fragrant (or you start to sneeze from the chilli) :shock:
Toss the chicken in and stir fry with the paste.
Toss the vege's in - beans & sayor stalks first for a minute or two, then the rest of the veges.
Break the cool rice up with your hand and add to the mix.
Stir/turn over for a few minutes
Perhaps add some Kecap Asin (Soy Sauce) but not too much otherwise too salty

decorate with
Fried onion
Sliced boiled egg
Sliced cucumber
Sliced Tomato

Salamat Makan!

I admit, I don't really dig regular indonesian fried rice much. I much prefer the chinese chicken and salted fish fried rice..

But there is an indonesian (I think it might be Indonesian as opposed to purely Javanese) fried rice that I love and eat regularly in Surabaya - it's called Nasi Mawut.. Omg - sensational.. Also, Nasi Goreng Merah is nice, but again, I don't know if this is found across indo or just in java..

But the best by far is...

Porcini Rissotto :P

Italian dish again, Balilife. Risotto Porcini??

Can you get me please the recipe for that Nasi Mawut.

The best food in Indonesia is in Makassar; be it Javanese, Menadonese, Chinese and the Makassar food.

Sorry Bali or Java. I'm not crazy about your food but have no other choice but to have them when I'm in Jakarta. Gado-Gado, Serundeng, Nasi Campur, Nasi Goreng, Nasi Lemak are Javanese dish but it's much much more yummy in Makassar. But those from Jawa Tengah (Central Java) such as Solo are also to die for. I love them!

Bali - a no no for me whatever it may be.

But it is nothing compared to babi guling. When it comes to cooking pig, Bali is pre-eminent in the world, (according to Anthony Bourdain of NO RESERVATIONS), and it is babi guling that reigns. Sate babi is a nice taster, but when it comes down to serious feasting...like during Galungan, you won’t find one Balinese who would opt for babi sate over babi guling...and that is for certain.

Yeah I agree Roy - Babi Guling holds that title.. The few times I had Babi Guling I almost needed to be hospitalized for a stomach pump - I ate so much.

Me too...especially after gluttonous consumption of that crispy skin! Ibu Oka remains the most well known, but there are other “secret” places tucked here and there which are equally as good and without the hassle of finding parking, standing in line and waiting.

Another favorite of mine is ayam betutu. There is a lady in our village who has an “at home” cottage industry of sorts making ayam betutu. She only charges Rp 40,000 for a whole bird, and she doesn’t use those scrawny ayam kampung or road kills either.

There must be a million ways to prepare chicken, but for me, nothing beats ayam betutu. This discussion is making me hungry!

Alright, I give you the "babi guling", though I have not tried it and not wanting to.

Remember, Anthony Bourdain ONLY went to Bali and Jakarta. That's the problem with most tourists or foreigners. For them, Indonesia is Bali and Jakarta, yet...there are so thousands of places still to be discovered and explored.

Menadonese food you should try: (in Jakarta there are Menadonese Restaurants mushrooming everywhere which surprised me on my last visit there).
- Yes, babi guling too and its sate manis or sate rica-rica.
- Tinorangsak (don't know how to spell it)
- Bubur Menado with its dabu-dabu (sambel)
- Ayam rica-rica (my husband goes crazy for it)
- Ayam or Ikan Woku
- Nasi Jaha
- Paniki (yes, it's bats - and never tried it)
- Daun Pepaya Tumis
- Daun Salam Bambu
- Soup Bruienebon; red beans (Dutch influence. Sorry for the spelling)
- Ikan bakar rica-rica
- Dabu dabu (Chilli condiment/sambel)

The desserts or cakes:
- Apang
- Cucur
- Waji
- Kue Lapis
- Panada (influenced by the Spanish as a name)
- Apang Coe
- Lalampa (lemper)

They're authentic, yummmm...yyyy...!!! and H O T!!!

My two favourite are Makanan Padang (Almost anything) overall and Sari Laut (Fruits of the sea). A close third has to be Babi Guling and Ayam Panggang.

My wifes Ayam Pedas however is to die for. What am I eating here in Kazakstan......stodge!!!

have you try this Martabak Manis atau Martabak Keju .. so the sweet one its mixed of chocolate and penuts.. and the saltee one mixed of cheeze . so delicious . and if you been lived in Java island this is must to try goreng tempe (street food ) , Gado - gado mixed all vegies steam with peanut sauce dressing and kerupuk udang you have to try this :) .. u make me hungry helloww lol
