Ayam Goreng Mente - Recipe

Postby Waterlily on Tue Dec 02, 2008 4:36 am

Recently returned from Bali - My husband is suffering withdrawal symptoms for his newly found favourite meal - Ayam Goreng Mente. Does anyone have a recipe or know where I can get it.

Isn't this a Chinese dish which is Chicken and cashew nuts with mix veg? Then perhaps you could find on any Chinese recipes website.
Unless it's fried chicken with cashew nuts only then it's unique and it's not even Indonesian as far as I know unless it's some sort of fusion cooking.

Mente is not for Mentega which is margarine. "Mente" means "mede" which is cashew nuts. I don't think Indonesians are that tired to say or add "ga" after "Mente"... :D :)

I have a felling that it is Atam Goreng Mentega even though as Milan says Mente is a cashew nut. This is not a dish I know and I know a lot of them.

If it is Mentega (margerine but taken as cooking with butter) you are in luck and have no problems. What do you think?

the important thing for ayam goreng is not the frying, it's the bumbu (spices) that you boil / simmer the chicken in first..

waterlilly, if you want to easy solution, go to yee sang in myaree and look for the spice brand 'bamboo', and the 'ayam goreng' spice. you boil your chicken with that and coconut milktender, then fry it.

if you want to do it all from scratch, you need tumeric, garlic, galanga, lemongrass, ginger, salt and pepper - amounts to your taste.. blend it then boil it in coconut milk til tender.. then fry it..

whammo - better recipes out there i'm sure, but this will get you through..

Sorry, should have explained better. It was fried chicken with a light batter, cashews. small bits of brocolli, onion, carrot all in a kind of broth and served in a bowl with a side dish of rice. We had it on several occasions at the Adi Dharma Restaurant on Legian Street. It was listed under Balinese Dishes. Delicious. :D :D

The one Balilife described above would be called: "Ayam Goreng Jawa" or almost similar to "Ayam Mbo Berek" which is very popular in Jakarta that it has its own Restaurant. But it has to be accompanied by its special sambal "bajak" and should be eaten with your fingers... Yummy... :)

My mother in law used to do something with the thickened bumbu after the chicken was removed from it. If I remember correctly, she used to mix shredded coconut with it (now I'm doubting myself) and then fry it.. It used to come out like a crumbly golden thing that you'd crumble over your rice.. Or was that from empal?? Now I'm confused.. Actually I think it was empal, which is essentially made on the same premise, first you boil or simmer beef in bumbu (spices) til tender, then fry it - I love tender empal..

BUT, my favourite indonesian dish, which I haven't had for years is Belado Sapi.. I know you can het Ikan belado, telur belado everywhere, but I LOVE beef belado.. My mother in law, who like many indonesians, can eat chillis like french fries, used to make it in perth and it was the hottest thing I've ever eaten. It seriously used to make me ill in that when I ate it, after about 10 minutes, it felt like my stomach had boiling water in it. But I could never resist, it was one of the best things I've ever eaten.. But my god, I used to suffer for it.. With no further ellaboration required.. Everywhere I go, I still ask for that dish, but they never have it.. A tante in vancouver from an indo restaurant made it for me once and it was good - but the meat was too crispy - I still like the meat to have a flesh like texture, rather than a krupuk texture..

Mmm, hungry now.. Ever since I got back from vancouver I've been eating with my mates at a place called HW.. Great nasi goreng jawa.. Be back there today, for the 3rd consecutive day.. I think my waist is expanding.. :(

It's just past 5 am here and reading the detailed description of all the dishes here - I am now very hungry.
Empal, Nasi Goreng Jawa (love it!) and yes, sapi belado or even eggs belado (red curry-like sauce), all accompanied with white rice - soooo...spicy but you'll look for more.
Can't wait to be in Jkt now in less than 2 weeks!
